A Fun Bite: Bacon & Mushroom Quiches

Recipe: Bacon and Mushroom Cheese-Crusted Quiche
Ingredients
Pastry
- 150g sifted flour
- 150g soft butter
- 100g grated cheese
Filling
- 125g bacon diced
- 1 medium onion diced
- 125g diced button mushrooms
- 30g butter
- 6 xl eggs
- 100ml cream
- 50g grated cheddar
- Salt pepper and mixed herbs
Method
Step 1: For the pastry, rub the flour, 150g of butter and 100g of grated cheese together until well mixed.
Step 2: Divide into 8 portions and press each portion into a muffin mould.
Step 3: In a pan, soften the onions in butter. Then add the bacon and mushrooms and simmer until cooked.
Step 4: Season with a pinch of mixed herbs and salt and pepper.
Step 5: Spoon the fried mixture into the prepared moulds.
Step 6: In a separate bowl, beat the eggs and cream lightly.
Step 7: Pour the egg and cream mixture into the moulds evenly. Then, place them into the air fryer basket 4 at a time.
Step 8: Sprinkle with grated cheddar cheese and bake at 170°C for 30 minutes.
Tip: For a vegetarian option, replace the bacon with sweet peppers

Recipe: Corn Fritters with Minted Yoghurt
Ingredients
- ½ cup natural yoghurt
- 2 tbs finely chopped fresh mint
- ½ cup self-raising flour
- 2 eggs
- ¼ cup milk
- 420g can corn kernels
- 2 green shallots, finely chopped
- ¼ cup finely grated parmesan
- 1 tbsp olive oil
- Extra fresh mint leaves to serve
Method
Step 1: For the minted yoghurt, combine the yoghurt and chopped mint and season to taste with salt and pepper. Set aside.
Step 2: Turn on the Sunbeam Café Style 4-Slice Sandwich Press. In a large bowl, combine the self-raising flour, eggs and milk and stir to combine. Fold through the corn kernels, green shallots and parmesan. Season with salt and pepper.
Step 3: Brush the bottom plate of the sandwich press with olive oil. Spoon the batter into 4 equal sized fritters on the sandwich press and close and lock the lid. Cook the fritters for 3-4 minutes or until fritters are golden and cooked through. Transfer to a warm plate and repeat with remaining fritter batter.
Step 4: Serve fritters with the minted yoghurt for dipping and extra mint leaves.

Recipe: Honey Whole Wheat Cinnamon Raisin Bread
Ingredients
- 1 and ¾ cups water
- ½ cup honey
- 2 and ¼ tablespoons unsalted butter (room temperature)
- 2 and ¼ teaspoons salt
- 2 cups bread flour
- 2 cups whole wheat flour
- ½ tablespoon vital wheat gluten (optional)
- 1 tablespoon ground cinnamon
- ¾ tablespoons milk powder
- 2 and ½ teaspoons bread machine or instant yeast
- ½ cup raisins
Method
Step 1: Sequentially add the ingredients to the Breville bread maker’s bread pan, starting with the water, honey, butter, salt, flours, gluten (if using), cinnamon, milk powder, and then yeast.
Step 2: Lock the bread pan inside the machine, and add raisins to the Automatic Fruit & Nut Dispenser.
Step 3: Select the WHOLE WHEAT option, pick your desired shade of crust and loaf size, and then hit the START button.
Step 4: As the baking cycle progresses, the aroma of honey, wheat, and cinnamon will fill your kitchen. Once the bread is finished, carefully remove it using oven mitts, and allow it to cool on a wire rack before slicing.

Recipe: White Chocolate and Macadamia Cookies
Ingredients
Tool: Kenwood Stand Mixer, K beater
- 200g Plain flour
- 1 tsp. Baking powder
- 1 pinch Salt
- 175g Caster sugar
- 100g White chocolate
- 50g Macadamia nuts
- 100g Butter
- 1 Egg, beaten
Method
Prep. (Before you begin)
Step 1: Finely chop the white chocolate and macadamia nuts.
Step 2: Melt the butter.
Getting started
Step 1: Fit the K beater to the machine.
Stage 1
Step 1: Add the Ingredients (flour, baking powder, salt, sugar, chocolate, nuts, butter, egg) into the Mixer bowl.
Step 2: Attach the Mixer bowl to the machine and fit the splash guard. Mix on speed 1 for 1 minute.
Step 3: Transfer the dough to a lightly floured work surface.
Step 4: Roll the dough into a log about 5 cm across.
Step 5: Wrap in plastic wrap and chill in the fridge for 30 minutes.
Step 6: Pre heat the oven to 180˚C.
Step 7: Line the baking tray with parchment paper.
Step 8: Cut the dough into slices about 0.5 cm thick.
Step 9: Place the slices on the baking tray giving them room to spread out.
Step 10: Bake for 10 minutes at 180°C until lightly golden.
Step 11: Leave to cool before serving.
