International Recipes to Try When You’re Stuck for Dinner Ideas

They say that variety is the spice of life, and what better what to enjoy variety in your life by trying new things. Ones of the easiest ways to experience new and different cultures and traditions is through food.

In this blog, we’ll share some of our favourite recipes that will delight your taste buds, with flavours inspired by many corners of the world, from China and Vietnam to India, Spain and Portugal.

Beef Empanadas: A taste of Spain and Portugal
Serves 16
Prep Time: 15 Minutes
Cook Time: 18 Minutes

Tefal’s Easy Fry Digital Air Fryer is the perfect appliance for preparing snacks like these gorgeous Beef Empanadas. Using pantry staples, this recipe is as enjoyable to make as it is to eat.

Ingredients:

  • 2 packs (375 g) ready-rolled Shortcrust pastry
  • 200 g minced beef
  • 3 or 4 fresh spring onions
  • 1 tbsp paprika
  • 1 egg yolk
  • 1 tbsp olive oil
  • Salt and pepper

Method:

  1. Finely chop the spring onions. Fry the meat with the olive oil in a pan for 8 minutes. Season with salt and pepper and add the spring onions and paprika. Leave to cool.
  2. Unroll the pastry, cut out 8 rounds of approximately 9 cm in diameter, top them with the cooled minced meat and fold over into a turnover shape. Combine the egg yolk with 1 tbsp water. Use to brush the edges and seal the empanadas by pinching with your fingers, then brush the tops.
  3. Place 8 empanadas in your Easy Fry basket and cook on GRILL MODE for 10 minutes. Repeat with the second batch.

Tip: You can flavour the empanada beef filling with cumin, oregano or minced garlic. Why not try adding tomato or sweetcorn to the filling for added flavour.

Masala Curried Salmon Fillets: A taste of India

A simple dinner that’s full of flavour, these Masala Curried Salmon Fillets will delight! Plus, there’s many more that you could have for lunch the next day. Make them with the Tefal Easy Fry Digital Air Fryer

Ingredients:

Ingredients:

  • 6 salmon fillets
  • 1 finely chopped onion
  • 2 crushed cloves of garlic
  • 1 very ripe tomato, diced
  • 1½ tbsp finely grated fresh ginger
  • 2½ tbsp garam masala (or curry) powder
  • 1½ tbsp concentrated tomato purée
  • 250 ml coconut milk
  • fresh mint leaves, for garnish
  • greaseproof paper
  • to serve: rice of your choice

Method:

  1. Fry the onion in a pan until translucent. Add the garlic and diced tomato and cook for a few more minutes before adding the garam masala, ginger and concentrated tomato purée. Mix well.
  2. Add the coconut milk and simmer for 2 minutes. Check the seasoning.

Place the salmon fillets on 6 large sheets of greaseproof paper. Pour the sauce over the fillets. Fold the sheets into parcels and stack them in layers in your Easy Fry basket. Cook on FISH MODE for 20 minutes. Garnish with chopped mint leaves and serve with rice of your choice.

Moroccan Cous Cous with Roasted Vegetables: A taste of Morocco
Serves 4-6 people

Flavour and colour combine in this Moroccan Cous Cous recipe, and with many roasted vegetables throughout, this dish is nothing short of healthy. Craft this dish with Sunbeam’s 4-In-1 Air Fryer + Oven

ACCESSORY REQUIRED:

  • Air Flow Racks

Ingredients:

  • 1 red capsicum, deseeded and roughly chopped
  • 1 green capsicum, deseeded and roughly chopped
  • 1 large zucchini, cut in half lengthwise, then sliced
  • 1 red onion, cut into wedges
  • 4 Tbsp olive oil
  • Zest and juice of 1 large lemon
  • 1 garlic clove, finely chopped
  • 1 tsp cumin
  • 1 tsp ground coriander
  • ½ tsp ground cinnamon
  • 250g dried cous cous
  • 400ml boiling water
  • 1 tsp turmeric
  • 400g tin chickpeas, drained and rinsed
  • 75g raisins
  • 15g coriander leaves, roughly chopped
  • ¼ cup mint leaves, shredded

Method:

  1. Line one of the Air Flow Racks with foil. In a bowl, toss together the capsicum, zucchini, and red onion with 1 tablespoon of olive oil. Spread the vegetables evenly out over the foil.
  2. Press POWER. Press VEGGIES setting. Adjust temperature to 200˚C. Adjust time to 15 minutes. Press START/STOP. Oven will ‘beep’ when preheated. Place the vegetables into the hot oven, turning halfway through cooking to ensure even browning.
  3. Whilst the vegetables are cooking, mix the remaining olive oil, lemon zest and juice, garlic, cumin, coriander, and cinnamon in a small bowl and set aside.
  4. Place the cous cous into a heatproof bowl, add the boiling water and turmeric, mix well and cover for approx. 5 minutes.
  5. Stir the lemony oil into the cous cous, along with the remaining ingredients, add the cooked vegetables, mix well, and adjust the seasoning.

Asian Pork Rashers: A Taste of China and Vietnam
Serves 4
Prep Time: 1 hour
Cooking Time: 30 minutes

Sticky and slightly sweet, these Asian Pork Rashers are a creative way to enjoy pork, plus with only a few ingredients required, these rashers make for a great lunch or dinner idea. Make them with the Sunbeam 4-In-1 Air Fryer + Oven

ACCESSORY REQUIRED:

  • Air Flow Racks

Ingredients:

  • 1 kg pork rashers cut into fours
  • 1/2 cup hoisin sauce
  • 2 Tbsp soy sauce
  • 2 Tbsp honey
  • 2 tsp sesame oil

Garnishes:

  • 1 red chilli, finely chopped
  • 2 spring onions, finely chopped

Method:

  1. In a large bowl combine hoisin, soy sauce, honey and sesame oil. Add pork and mix. Cover with aluminium foil and keep in refrigerator for 1 to 24 hours.
  2. Line the three Air Flow Racks with alfoil.
  3. Place the Drip Tray at the bottom of the oven.
  4. Press POWER. Press AIR FRY. Adjust temperature to 200˚C. Adjust time to 20 minutes. Press START/STOP. Allow oven to pre heat. Oven will ‘beep’ when preheated.
  5. Place the pork in a single layer on each of the three Air Flow Racks. Close the door. Press START/STOP.
  6. Cook ribs for 5 minutes on each side, then swap racks around. Cook for 5 minutes, on each side.

Tip: Serve with a healthy salad of thinly sliced cucumber and Asian cabbage, mint and coriander leaves and a dressing of 1 Tbsp of white vinegar, soy sauce, olive oil and 2 tsp sesame oil and 1 tsp honey mixed together.

Café Lima
Serves 1

Ingredients:

  • 45 ml espresso
  • 20 ml mojito mint syrup
  • 20 ml lime juice
  • 4-5 ice cubes

Method:

  1. Put the ice cubes in a shaker.
  2. Prepare the espresso in the same shaker and add the mojito mint syrup and lime juice.
  3. Shake for about 20 seconds and pour the mixture into a tall glass.

Freshpresso
Serves 1

Ingredients:

  • 45 ml espresso
  • 30 ml vanilla flavoured syrup
  • Orange juice
  • 4 ice cubes

Method:

  1. Place the ice cubes and vanilla syrup in a blender with a little orange juice and the freshly prepared espresso, and blend until smooth.
