Recipe 1: Mushroom Risotto

Bring a touch of Italy into your home with this simple yet delicious mushroom risotto microwave recipe.

For this recipe, you’ll need Sharp’s 42L 1100W Convection Microwave, which boasts Inverter Technology for even-cooking and 10 pre-programmed settings for easy one-touch cooking. This microwave recipe also requires the use of 4x ramekins.

Makes 4
Ingredients:

  • 2 tablespoons butter
  • ½ onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 cup Arborio rice
  • 2 cups broth
  • ½ cup white wine
  • ½ cup Mushrooms
  • 1 teaspoon Thyme
  • 1/8 cup Parmesan cheese

Method:

  1. Start off by placing ½ tablespoon of butter to each ramekin of the four ramekins and adding a spoonful of onions. Cook in your microwave for 1& ½ minutes on high. Make sure to stir the onions in each ramekin after 30 seconds to distribute the melted butter.
  2. Once the onions are finished cooking, add garlic, ¼ cup rice, and ¼ & 2 tablespoons broth. Cover each ramekin loosely with microwave-safe plastic wrap and heat in the microwave at 50% power level for 2 minutes, then remove each ramekin from the microwave and stir before repeating the heating process again.
  3. Add 2 tablespoons of wine to each ramekin and the mushrooms. Cover each dish again and heat for 2 minutes Lastly, add your thyme and microwave for 1 minute.
  4. Top off your dish with parmesan cheese and enjoy!

Ingredients:

  • 1 garlic clove, minced
  • 1 tablespoon onion, finely chopped
  • 1 cup chopped spinach
  • 3 tablespoons cream cheese
  • 1 tablespoon sour cream
  • 1 tablespoon parmesan cheese
  • 1 tablespoon milk
  • 1 teaspoon corn starch
  • ¾ grated mozzarella cheese

Method:

  1. In a microwave-safe bowl, combine all the ingredients.
  2. Microwave the dish for 5 minutes or until you notice the mixture starts to bubble.
  3. Now, for the best part: remove, season to your liking, and enjoy! This pairs perfectly with tortilla chips, but my favourite thing to dip is celery.

Recipe 3: Beef & Barley Stew

Warm and hearty, this Beef and Barley Stew is perfect for weeknight dinners with the family or entertaining friends.

This microwave recipe, which makes 6 can be cooked with Samsung’s 40L 1000W Microwave. With its spacious 40L capacity, 10 power levels and Power Defrost setting, this Samsung microwave packs a punch, facilitating any home cooking need.

Makes 6
Ingredients:

  • 675 g beef stew cubes, cut into ½ inch pieces
  • ½ cup chopped onion
  • 2 Tbs. all-purpose flour
  • 1 Tbs Worcestershire sauce
  • 1 can (380-405 g) beef broth
  • 2 medium carrots, cut into ½-inch slices (about 1 cup)
  • ½ cup barley
  • 1 bay leaf
  • ¼ tsp. pepper
  • 1 pkg. (250-280 g) frozen peas, thawed

Method:

  1. In a 9” x 9” casserole/baking dish, combine beef, onion, flour, and Worcestershire; mix well. Cover with lid. Cook at High (0) for 6 to 8 minutes until beef is no longer pink, stirring once.
  2. Stir in beef broth, carrots, barley, bay leaf, and pepper. Cover with lid. Cook at Medium for 1 to 1½ hours until carrots and beef are tender, stirring 2 to 3 times during cooking.
  3. Stir in peas. Cover with lid. Cook at Medium for 10 minutes. Let stand for 10 minutes. Remove bay leaf before serving. Note: Serve with your choice of bread, rice or mashed potatoes.

Recipe 4: Goats Cheese & Proscuitto Pizza

Deliciously crispy and full of flavour, this pizza recipe features mozzarella, goats cheese and tomatoes.

Makes 1
Ingredients:

  • 1 home made pizza base
  • 1/2 cup good quality succo sauce or tomato passata sauce
  • 240g fresh mozzarella, torn into large pieces
  • 200g goats cheese, broken into large pieces
  • 100g baby roma tomatoes on the vine
  • 8 slices prosciutto
  • 30g good quality mixed lettuces leaves

Method:

  1. Turn FUNCTION dial to PIZZA setting.
  2. Turn TIME dial to 15 minutes.
  3. Turn TEMPERATURE dial to 210°C CONVECTION. Press the START button.
  4. Put the pizza base on a pizza tray.
  5. Spread with succo or tomato passata. Top with mozzarella, goats cheese and tomatoes.
  6. When preheating has completed, place pizza into the Smart Oven Pro for 15 minutes.
  7. Remove from the oven. Top with sliced prosciutto and mixed lettuce leaves.
