Spiced Lamb Shanks with Broccolini & Beans
INGREDIENTS
- Lamb shanks
- Olive oil
- 3 x cloves of Garlic (2 whole and 1 diced)
- 1 x red chilli chopped (dice 1/4 for potatoes)
- Cayenne pepper
- All spice
- 2 x onions thickly chopped
- Salt and pepper
- 1L of veggie stock
- Lemon
- Beans
- Broccolini
- Kipfler potatoes
METHOD
Step 1.
Rub meat with spices, salt and pepper and oil. Let the shanks marinade in the coating for 10 minutes
Step 2.
Sear the meat in the Crock-pot and cook for approximately 5 minutes or until brown all over
Step 3.
Add the stock, chopped onions, whole garlics and chili
Step 4.
Let the shanks cook for 7 hours in the Crock-pot on low. Try to keep the lid closed to keep all the air and flavours enclosed- this will help the meat to absorb all the delicious flavours
Step 5.
Once you’re nearly ready for dinner, turn the crockpot to high. Boil the kipfler potatoes, then pan fry with the remaining diced garlic, chili and oil to get a nice coating
Step 6.
Blanche the beans and broccoli for 3 minutes, or until soft. Once cooked, drizzle with salt, pepper and lemon juice
