Smeg’s Timesaving Omnichef Oven

There’s a new way of cooking with Smeg’s Omnichef Ovens, available in the Dolce Stil Novo range. An Omnichef Oven is a time saving oven that produces restaurant quality dishes in a sustainable manner. Omnichef Ovens use Smeg’s Galileo Multicooking Technology, which boasts multiple function cooking in a time-saving manner that we’ll explore below.

What is Omnichef?
An Omnichef oven is a unique oven with 3 cooking methods and 7 cooking combinations. Smeg’s 60cm Built-In Steam Oven is an Omnichef oven that features Smeg’s Multicooking Technology that combines traditional, steam and microwave technologies, all of which can be used on their own, one after the other or simultaneously.

What is Smeg’s Multicooking Technology?
Multicooking Technology lets you combine traditional, steam and microwave technology to help you reduce your food prep, cooking and clean-up time by up to 70% without compromising on results.

How could you save time with Multicooking?
By using Smeg’s Multicooking Technology, you can speed up the cooking process to save on effort, energy and time. For example, when roasting a chicken, you can create even browning results with traditional heat, retain flavours and moisture with the steam technology and fasten up the whole process with microwave technology. By combining the three cooking methods, you could save up to 70% of cooking time when compared to normal traditional heat cooking alone.

What is the MultiStep function?
If your dish needs multistage cooking with a range of cooking methods involved, then Smeg’s multi-cooking tech will deliver. Simply add in the first cooking step with the relevant function and cooking time, then add in the second step and third and the oven will cook according to what has been assigned. When cooking, the oven’s display will show you the cooking progress with a countdown timer.

Right at the tips of your fingers, access a collection of recipes that will help you make mealtime a breeze! Make classic dishes for dinner, meal prep for the week or try out new recipes as you entertain friends with 150 automatic recipes to choose from. On the oven’s touch screen, select your dish from the menu, for example BBQ pork ribs, then select the weight and the oven will automatically calculate the optimum cooking conditions to deliver effortless, delicious results.

Cook More with 10 ‘Sametime’ Preset Recipes
The Sametime presets are ideal for use when you’re cooking a few dishes together, such as fish and vegetables. Just select the most suitable Sametime preset and the oven will automatically choose the best cooking function, temperture and time for your dishes.

Recipes to try with Smeg’s Omnichef Oven

Baked Ocean Trout Crosta with Salsa Verde
Serves 4 

Ingredients:

  • 800 g side skinned pin boned ocean trout
  • 2-3 sheets puff pastry
  • 1/2 leek shredded
  • 1/2 fennel bulb shredded
  • 1/2 cup dried sour dough crumbs
  • 1 handful sage leaves shreddedA12
  • 1 egg yolk for glaze
  • Salt and pepper
  • 20 g butter

Salsa Verde

  • 1 bunch flat leaf parsley
  • Zest of one lemon
  • ¼ cup caperberries
  • 1 garlic clove
  • 1 cup extra virgin olive oil

Method:

HOW TO SET THE OVEN: COOKING > MULTITECH > MULTITECH > 220°C > 100 watts > 20% steam > 27 minutes

  1. In a pan add butter and cook out shredded fennel, leek and sage until caramelised. Cool and set aside.
  2. Place sheets puff pastry on floured bench and sprinkle with ½ of the breadcrumbs. Place the ocean trout on top of the crumbs and top with the caramelised fennel/leek mix.
  3. Sprinkle the remainder of the breadcrumbs on top, season with salt and pepper. Top with 2 more sheets of puff pastry.
  4. Roll and neatly tuck in the pastry, glaze with egg yolk and season. Chill for 10 minutes.
  5. Set your oven to the above setting, line the glass baking dish with grease proof paper. Place dish in cold oven and start the program.
  6. For the salsa verde sauce, place all ingredients in a jug and blend with the Smeg hand blender.

Rosemary and Olive Focaccia

Makes one family size tray

Ingredients:

  • 7 g dry yeast
  • 450 ml room temp water
  • 700 g bakers’ flour
  • 4 g salt
  • 2 g sugar
  • 4 stalks of rosemary chopped
  • 30 ml olive oil
  • 120 g pitted green or black olives
  • 50 ml olive oil to brush top with

Method:

COOKING > MOISTEN > BAKERS FUNCTION > 200°C > Manual burst of steam > 20 minutes

  1. Set the oven to the above setting
  2. Dissolve the yeast in water
  3. In a Smeg stand mixer and add flour, salt, sugar with the rosemary and oil. Mix with the dough hook, slowly adding the liquid to the dry ingredients.
  4. Mix for approx. 3 to 4 minutes on a low speed
  5. Place dough in a lightly oiled bowl, cover with cling wrap. Place it in a warm place and allow it to double in size.
  6. Turn the dough out on a well greased tray. Shape the dough in a rectangular shape, press your fingertips into dough, leaving small indents.
  7. Push in olives and rosemary leaves into the dough and brush with olive oil.
  8. Allow the dough to rise again for 30 mins.
  9. Sprinkle with sea salt and remaining olive oil
  10. Place focaccia in the oven on shelf level 2
