Easter is around the corner! If you’re spending the long weekend at home, why not make new memories with those nearest and dearest. Gather your family and friends around for a home-cooked meal that will satisfy the senses!
Whether it’s brunch or a dinner, the Easter long weekend is a great time to experiment with something new. Why not make warm meals to welcome the cooler weather. Keen for an easier way to entertain? Host a DIY lunch with some home-made pizza dough and everyone can top their own pizzas; the options are endless!
BREAK IT UP WITH BRUNCH
Keen to host a brunch with your loved ones this Easter? Do it with a spread of pancakes or maybe some chocolate and banana French toast to warm up the day.
Recipe: Pancakes
Serves 4
Total time: 15 minutes
Whip up this easy pancake mix with Kenwood’s QuickMix+ Hand Mixer. Featuring the QuickMix+ gradual speed setting, the hand mixer delivers a slow start to reduce mess when ingredients are driest.
Ingredients 1
- 200 grams Plain flour
- 2x Eggs
- 35 grams Caster sugar
- 200 ml Milk
- 1 1/4 tsp. Baking powder
- 1 pinch Salt

Method
Getting started
- Fit the Stainless Steel Beaters to the Kenwood hand mixer.
Stage 1
- Add Ingredients 1 (flour, eggs, sugar, milk, baking powder, salt) into a mixing bowl.
- Use the Kenwood hand mixer with Stainless Steel Beaters and start with the QuickMix+ speed.
- Gradually increase the mixing speed and mix until all ingredients are evenly incorporated. This should take about 2 minutes.
Stage 2
- Add Ingredients 2 (butter) to the frying pan.
- Heat on a medium high heat.
- Gradually pour the batter into the frying pan until the bottom of the pan is just covered.
- Cook each side for about 1 minute or until golden brown.
- Transfer the pancake to a serving plate and repeat with the rest of the batter.
- Serve with toppings of your choice such as maple syrup and fresh fruits such as bananas and berries.

Recipe: Chocolate and Banana French Toast Recipe
Serves 4

Ingredients
- 4 tbsp chocolate spread
- ½ cup of cream
- 2 tbsp caster sugar
- 1 tsp vanilla bean paste
- 3 large eggs
- 1 pinch cinnamon
- 8 slices of café style white bread or brioche toast
- 1 large banana
- 2 tbsp butter
To Serve
- Maple syrup
- 1 cup fresh blueberries
Method
- Place sugar, cream, cinnamon, vanilla bean paste and eggs into a bowl. Whisk until well combined.
- Cut banana into 3rds, then each piece into 3 lengthways (you should have 9 pieces in total).
- Place a chopping board onto the bench. Dip 1 side of the bread into the egg mixture, place the dipped side down onto a chopping board. Spread the side facing up (undipped side) with chocolate spread (all the way to the edge), place 2 slices of banana on the bread.
- Dip another piece of bread one sided into the egg mixture, then place the undipped side on top of the bananas. Press down around the edges.
- Repeat with the remaining 6 slices of bread. You should have 4 sandwiches.
- Heat a large non-stick fry pan to a medium temperature. Place 1 tbsp. of butter into the pan.
- Once the pan is hot, use an egg flip utensil to place 1 sandwich in the pan and cook for 2-3 minutes until golden, then flip and cook for 2-3 minutes the other side.
- If needed, add a little more butter to the pan and repeat step 7 for the remaining 3 sandwiches.
- Cut each sandwich in half on a plate and serve with lashings of maple syrup and fresh berries.

DIY PIZZA LUNCH
Not sure what to do this Easter? A DIY pizza lunch will do the trick! Prepare pizza dough ahead of time, let everyone top their own pizzas; even the kids can get involved and then all you have to do is pop them into the oven for effortless entertaining!
Recipe: Pizza Dough
Serves 6
Total time: 80 minutes
Knead together pizza dough quickly with the Stainless Steel Kneaders of Kenwood’s QuickMix+ Hand Mixer. Featuring a pulse function and gripped handle, this mixer delivers powerful performance with comfortable handling.
Ingredients
- 500 grams Plain flour
- 7 grams Dried yeast
- 2 Tbsp. Olive oil
- 1 1/2 tsp. Salt
- 300 grams Water
Method
Getting started
- Fit the Stainless Steel Kneaders to the Kenwood hand mixer.
Stage 1
- Add ingredients (flour, yeast, oil, salt, water) into a mixing bowl.
- Using the Kenwood hand mixer, start gradually with the QuickMix+ function. Increase the mix speed and mix all ingredients for 10 minutes or until dough is kneaded well.
- Cover with a tea towel and leave dough to prove for 40 minutes.
- Transfer the dough to a lightly floured worksurface and divide the dough into 2 equal pieces.
- Gently pull the edges into the centre. Roll the dough over and roll into a ball shape. Repeat this action with the other dough piece, then cover with a tea towel. Leave to rest for 10 minutes.
- Pre heat the oven to 250°
- Sprinkle plain flour onto the baking tray.
- Take one of the dough balls, and place upside down on the lightly floured worksurface. Carefully flatten the dough with your wrist.
- Using a rolling pin, shape the dough into a circle about 15 cm in diameter and 0.5cm thick.
- Place the dough onto the baking tray and garnish your pizza as desired.
- Bake for 10 minutes at 250°
- Repeat with the other dough ball.
- Serve pizzas warm.

EXCELLENT EASTER DINNER
Impress your guests with a delicious dinner this Easter. Fish Tacos are an easy cook and assemble dish and if you’re in the mood for something Asian-inspired, why not try out some Miso Pork with Stir Fried Greens. Both can be crafted on the spacious capacity of the Westinghouse 90cm Induction Cooktop.
Recipe: Fish Tacos
Serves 4
Ingredients
- 12 small soft tacos
- 700g white fish
- 2 small avocados
- 1 tbsp lemon juice
- 100g mixed baby tomatoes
- 1 baby cos lettuce
- ¼ purple cabbage
- 8 tbsp grated cheese
- 1 tsp smoked paprika
- 1 tsp cayenne pepper
- 1 tbsp olive oil
- 4 pickles
- 2 cobs corn
- 4 tbsp aioli
Method
- Remove the coriander leaves from the stalks. Chop the coriander and set aside.
- Slice the tomatoes in half, rinse and dry the cos lettuce. You can serve the cos whole or thinly sliced.
- Place aioli into a serving bowl.
- Thinly slice the pickles.
- Remove the seeds from the avocados, slice into thin wedges.
- Boil the corn for 5 minutes until tender and set aside.
- Dice the fish into 1.5cm chunks. Sprinkle the fish with salt, pepper, cayenne and smoked paprika. Drizzle with remaining lemon juice.
- Place oil into a medium non-stick fry pan. Heat to a medium heat and fry the fish until golden and cooked through.
- Heat a grill pan to high. Spray with oil and cook soft tacos for 30 seconds each side until coloured, serve on a plate. Place corn onto grill plate and allow to get some colour.
- Place all bowls of ingredients into the middle of the table and assemble your own tacos.

Recipe: Miso Pork With Black Rice And Stir-Fried Greens
Serves 4
Prep Time: 80 minutes
Cook Time: 35 minutes
Ingredients
- ¼ cup Shiro Miso (white miso)
- 2 tbsp tamari or soy sauce
- 2 tbsp sake, Chinese cooking wine or dry white wine
- 1 tbsp maple syrup
- 2 (about 400g each) pork fillets, trimmed
- 2 tbsp extra virgin olive oil
- 2 garlic cloves
- 2cm piece ginger, finely chopped or grated
- 1 red chilli (optional), finely chopped
Stir-Fried Greens
- 1 bunch broccolini, ends trimmed
- 1 cup bean sprouts, trimmed
Rice
- 1 cup black or brown rice
Method
- In a ceramic or glass dish large enough to hold the pork fillets, combine the miso, tamari, sake or wine and maple syrup. Whisk with a fork until combined and add a splash of water if it is too thick. Add the pork fillets and spoon over the marinade to coat. Cover, place in the fridge and leave to marinate for at least an hour, longer if you have time. Remove the pork from the fridge 15 minutes before you are ready to cook.
- Place the black rice in a saucepan with 3 cups water. Place over high heat and bring to the boil uncovered. Reduce the heat to low and when the water is just simmering, cover with a lid and leave to cook for about 35 minutes or until all the water is absorbed and the rice is tender. Turn off the heat, keep covered and let the rice sit for 5 minutes. Alternatively, you can cook in a rice or grain cooker.
- When the rice is 15 minutes away from being ready, heat a large non-stick frying pan or the barbecue over medium heat. Lift the pork from the marinade and cook over a medium heat for about 10 minutes, turning occasionally. Turn off the heat, cover with foil to keep warm to allow the meat to rest for 5-10 minutes.
- Pour the marinade into a small saucepan. Bring to the boil over high heat. Reduce the heat and simmer for a few minutes. If sauce is too thick, add a little warm water.
- In the meantime, heat a wok or large frying pan over high heat. Heat the oil garlic, ginger and chilli (if using) and fry for 30 seconds. Add the greens and tossing regularly until greens are tender.
- Serve: Divide the rice between plates, top with a handful of bean sprouts. Slice the pork, place onto plates with greens. Drizzle with the miso sauce and serve.

Ingredients
- 1⅓ cups chocolate chips or leftover Easter Eggs/Bunnies
- ½ cup smooth peanut butter
- 3 cups corn flakes cereal
Method
- Place the chocolate in the Sunbeam Mixmaster® HeatSoft™ Planetary Mixer bowl, attach the scraper beater and fit the Heatsplash™ guard onto the bowl.
- Turn on HeatSoft™ and select MELT on low speed. Gradually increasing speed, mix until the chocolate becomes silky smooth. Turn off HeatSoft™.
- Mix in the peanut butter until well combined and smooth.
- Add the corn flakes mix until all are well coated.
- Scoop the cookie mix onto a baking sheet lined with baking paper by the tablespoon, and form into a cookie shape with your hands (careful, it will be sticky!).
- Chill in the fridge or freezer until hardened and ready to eat!
Recipe: Chocolate Banana Split
Serves 1
Total time: 5 minutes
Ingredients
- 200 ml of cold milk
- Cocoa powder
- Caramel sauce
- 1/2 banana
Method
- To create the first part of the recipe, add a thin layer of caramel sauce and banana pieces to the bottom of a glass serving bowl.
- Use the Delonghi Eletta Explore Automatic Coffee Machine and froth 100ml of milk to create hot micro foam milk. Then mix in the cocoa powder evenly to create hot chocolate.
- Pour the hot chocolate into the bowl until it fills around 1/2 of the glass bowl.
- Prepare 100ml of cold milk foam using the Delonghi Eletta Explore Automatic Coffee Machine and pour it over the hot chocolate.
- To complete the recipe, decorate with caramel sauce and banana pieces.
Tip: For best visual results, pour each drink into the glass over the back of a long spoon to create even layers.
